Leaves and young stems - raw or cooked[1][2][3][4][5]. A characteristic aromatic flavour that goes well with beans[6]. The young and tender leaves make a refreshing spring soup[7][6]. Root - raw[8][9]. It can be sliced thinly or grated and then be added to salads[7].
